HAPPY LABOR DAY & ROBERT REDFORD!!!


The vital force of labor added materially to the highest standard of living and the greatest production the world has ever known and has brought us closer to the realization of our traditional ideals of economic and political democracy. It is appropriate, therefore, that the nation pay tribute on Labor Day to the creator of so much of the nation’s strength, freedom, and leadership – the American worker.

Better Than Robert Redford Dessert

My friend Rita Kenow use to make this and bring to work for us to enjoy, and believe me we did....This is sooooo good!

Preheat oven to 350 degrees.

First Layer:
1/2 cup (1 stick) margarine or butter, melted
1/2 cup broken pecans
1 cup flour
Mix and spread in a 9x13' pan. Bake at 350 degrees for 10 minutes.Let cool!

Second Layer:
1 cup confectioners' sugar
1 (8-ounce) package cream cheese, softened at room temperature
1/2 of a(12- or 16-ounce) container thawed whipped topping
Beat and put on top of cool crust!

Third Layer:
1 (6-ounce) box or 2 (3-ounce) boxes instant chocolate pudding
3 cups (2-percent) milk, cold.
Beat and put on second layer. Cover with other 1/2 carton cool whip. may put chooped nuts, toasted coconut or slivered chocolate candy bar on top!
Refrigerate several hours!

Strawberries, Strawberries and More Strawberries This Way & That Way!!


Strawberry Lemonade Recipe

Ingredients
2 cups water
1 cup sugar
1 tablespoon grated lemon peel
1 cup fresh lemon juice
1 pint fresh strawberries, hulled and halved
2 cups cold sparkling water or club soda
Ice
Mint sprigs, garnish
Whole strawberries, garnish
Directions
In a medium saucepan, bring the water and sugar to a boil. Reduce the heat and simmer, stirring occasionally, until the sugar dissolves. Add the lemon peel and lemon juice, stir, and remove from the heat. Let cool completely, then strain into a clean pitcher.

In a blender, puree the pint of strawberries and add to the pitcher with the lemon juice. Stir well to combine and refrigerate until well chilled.

Add the sparkling water and stir well. Pour over glasses filled with ice and serve, garnished with mint and strawberries.

Strawberry Soda Pop Cake

Ingredients:
1 yellow or white cake mix
1 large pkg. or 2 small pkgs. strawberry Jell-O
1 cup boiling water
1 cup strawberry soda pop
1 small box vanilla INSTANT sugar free pudding
1-1/2 cups skim milk
1 large container of lite cool whip
Preparation:
Prepare cake mix according to package directions; bake in 13x9x2-inch pan. While still warm, puncture cake with a fork, about every 2 inches.
Combine Jell-O and boiling water. Stir to dissolve. Add strawberry soda pop to Jell-O and stir. Pour over cake while warm. Refridgerate this cake for at least 4 hours before serving.
Mix pudding with 1 1/2 cups skim milk, and beat until thick. Stir in Cool Whip and spread over cake before serving.

7 Up Fresh Strawberry Pie Recipe

Ingredients:
1 pie shell (8" size) baked & cooled; or crumb crust if preferred
1 pint fresh ripe strawberries, washed,stems removed, well drained
***Glaze***
1 cup sugar
1 cup 7up (or Squirt)
5 tablespoons arrow root or cornstarch
1/8 teaspoon salt
1 teaspoon red food coloring
1/2 lemon, juiced
4 tablespoons cranberry jello
Directions:
Place strawberries in pie shell with flat side down.

Glaze: In a medium non-aluminum saucepan mix all ingredients EXCEPT the cornstarch or arrow root. Bring to a boil. Remove from heat, add cornstarch or arrow root and cook until thick. Remove from heat & stir in the jello. Stir until dissolved. Let cool.

Spoon glaze over fresh strawberries in pie shell. Completely cool, then chill in refrigerator overnight.

Decorate the outer edge of the pie with whipped cream or cool whip.

If using pre-made crumb pie crust, melt 1/3 cup chocolate morsels; with small slanted cake spatula, spread a thin coat of chocolate in bottom only, of pie shell. Apply chocolate in a circular motion making sure you cover the complete bottom of shell. This prevents the crumb crust from breaking up when you slice the pie. When using a chocolate crumb crust I use white chocolate chips for the coating

Recycle/Make Your Own Paper~Strawberry Shortcake & Angel Lush!!!


I like trying new crafts, but am not always able to invest in all the supplies....so this is a groovy way to make paper with stuff you probably have on hand (or can acquire for next to nothing!
If this is the first time you are making paper, don't be afraid to experiment with different fibers, you don't have to stick with paper related products. Add whole flower heads to the pulp mixture after it has been through the blender. You can add scraps of yarn, tin foil, even seeds. Its all comes down to what you want. Experiment with different textures and colors after all Ts'ai Lun did! Remember, some of your ideas will turn out while others may not. Have fun with it, express your creativity..
Instructions

Things You’ll Need:
Gather supplies:
blender
white glue
water
panty hose
wire hanger
sink
and of course paper...
Many types of paper that can be used include:
Computer Paper (unprinted)
Newspaper (If you want a grayish colored paper)
Magazines
Egg Cartons
Old Cards (For heavier paper)
Toilet Paper
Paper Bags
Non Waxed Boxes (Pre-soak in warm water)
Office Paper
Tissue Paper (For finer paper)
Typing Paper
Napkins
Construction Paper

Step1
Create the drying screen before you begin. You can create a drying screen by shaping the wire hanger into a square or rectangle. Stretch the panty hose over the wire being careful not to snag them. You will need a screen for each piece of homemade paper you plan to make.
Step2
Tear up your old paper. I shred it with a paper shredder. What I don't use to make new paper is used for garden mulch. You can also tear the paper into 2 inch, or smaller, squares.
Step3
Add water and blend. Place your paper in the blender. Cover it with water. Allow it to sit and soak up some of the water. Add more water to keep the water level about an inch above the top of the paper. Adding enough water is important to keep from over working your blender! Run the blender on low speed. Once you have grey liquid, blend a few more minutes. When you are finished, the original paper should be completely broken down.
Step4
If you want colored paper, add a few drops of food coloring. Blend until the color is distributed evenly. I enjoy the natural off-white color of the paper with small specks of color from any colored paper in the mix. You can also get creative in this step and add natural elements such as sticks, shells, or flowers.
Step5
Give your blended pulp a glue bath. Fill your sink with 4 inches of water. Add 2 tablespoons of glue to the water. Dump the contents of your blender into the sink full of glue water. Use your hands to mix it up. Make sure it is mixed well.
Step6
Strain your homemade paper. Place your screen at the bottom of the sink. Wait a few seconds and then very slowly begin lifting the screen. You should lift as slowly as possible, taking at least 30 seconds to lift it from the water.
Step7
Dry your new paper. Take your screen outside and dry it in the sun. It should be completely dry before you try to remove the paper. Very gently pull the paper off. To speed dry your homemade paper, you can try putting it in the oven on a very low heat setting. Just be careful not to set the oven temperature too high. You would not want to catch your homemade paper on fire!
Step8
Iron your new paper (optional). You can iron the homemade paper if you wish. This will remove the wrinkles. If you do this, be careful not to scorch it with the iron.
Step9
Make something pretty from your homemade paper. You can make special notes, cards, use it in scrapbooks or other paper crafts, or make a book cover out of it.
NOTES:
It's fun to add bits of thread and flowers and seeds, etc
While your paper is drying you could lay it over an overturned bowl and it will dry into a bowl shape...



Strawberry Shortcake:


Super easy and very good

1 cup milk, divided
¼ cup sour crème
3 tbsp. sugar
2 ¼ cups dry all-purpose baking mix for biscuits (I used Bisquick)
1 pkg. (4-serving size) instant vanilla pudding and pie filling mix
1 tub (8 oz.) whipped topping (Cool Whip)
4 cups sliced strawberries
1/3 cup sugar

Preheat oven to 425F.

Mix ½ cup milk, sour crème and 3 tbsp sugar in large bowl with wire whisk. Stir in baking mix until blended. Spread evenly into greased 9-inch round cake pan. Bake 12-15 minutes until golden brown. Remove and let cool completely on wire rack.

Meanwhile, combine dry pudding mix and remaining ½ cup milk; blend well. Gently stir in half of whipped topping until well blended. In a separate bowl mix strawberries and 1/3 cup sugar; set aside. Slice cake in half horizontally to make two layers.

Place bottom of cake on serving plate. Spread pudding mixture evenly over bottom layer (saving a large spoonful of pudding mix); evenly layer half of strawberries on pudding layer; put leftover large spoonful of pudding mixture in center of strawberry layer; place top cake layer on top, press down gently. Spread top with remaining whipped topping and top with remaining strawberries...

Angel Lush with Pineapple:


This is the perfect dessert for when you just want something light. The hardest part was cutting the angel food cake! This is super easy to prepare but looks and tastes great! I hope you enjoy.

Ingridents:
1 can (20 oz.) DOLE® Crushed Pineapple, undrained
1 pkg. (4 serving size) JELL-O® Vanilla Flavor Instant Pudding & Pie Filling
1 cup thawed COOL WHIP® Whipped Topping
1 pkg. (10 oz.) prepared round angel food cake
Seasonal Berries

Directions:
Mix pineapple and dry pudding mix in medium bowl. Gently stir in whipped topping. Let stand 5 minutes.
Cut cake horizontally into 3 layers. Place bottom cake layer, cut side up, on serving plate.
Spread 1-1/3 cups of the pudding mixture onto cake layer; cover with middle cake layer. Spread 1 cup pudding mixture onto middle cake layer; top with remaining cake layer. Spread with remaining pudding mixture. Refrigerate at least 1 hour or until ready to serve. Garnish with your favorite seasonal berries.
Store leftover dessert in refrigerator.

Great Substitute:
Prepare as directed, using JELL-O Vanilla Flavor Fat Free Sugar Free Instant Reduced Calorie Pudding & Pie Filling and COOL WHIP LITE Whipped Topping.

How To Cut the Angel Food Cake:
Use a serrated knife and gentle sawing motion to easily cut the angel food cake.

Three Miles Down That Road Again!!

Well I have traveled 3 miles down that olde weight loss road again. Along the way I found out I had to go on a different med for my diabetics...The old one was just to strong for me, making me dizzy and really low blood sugar...and I did something stupid.....You know the really STUPID kind of thing...left my cell phone in my jeans and washed it....OH MY! OH MY! how could I of done that...Do have something to be happy about..LOST a nice ugly 5.9 pounds....Happy with that you betch you!!!!
Here is a desert I made for myself this week....I call it
Heaven Sent Key Lime Pie:
Serves 7 and is 2 WW Points



You will need a 4 serving size, sugar free, Lime Jello
2 containers of Weight Watchers Lime Pie Yogurt
1 tub (80z) of Cool Whip light or fat free
In a microwave safe measuring heat water on high for 45 seconds to 1-1/2 minutes, or until boiling. Whisk Jello until dissolved.
In a large bowl whisk together Jello mixture and the yogurt...
Fold in the Cool Whip..
You can just leave in that bowl or do like I do put 1/2 cup into sherbet dishes and cover with plastic wrap...Seems much nicer that way and then I am not tempted to eat too much...
Refrigerate at least 4 hours or until set..

Here was my supper for tonight: I had Mexican Food!
Jicama Slaw:
1 WW points
1 medium jicama
2 cups angel hair cole slaw
1-11oz can mandarin orange segments, drained, reserve 1/4 cup
1/4 cup light Mayonnaise
1/4 teaspoon fajita seasoning
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 bunch fresh cilantro leaves chopped.
Grate the jicama into a large bowl, add the cole slaw and mandarin oranges: Set aside
In a small bowl, whisk together reserved mandarin juice, mayonnaise, fajita seasoning and salt and pepper.
Pour dressing over jicama mixture. Toss to mix thoroughly. Top with cilantro.
Serve immediately...

CHICKEN CHALUPAS:
Serves 6 WW Points 5
1 roasted chicken (2 lbs)
12 fat free flour tortillas
2 cups low fat shredded sharp cheddar cheese
1 cup mild green chili salsa
1 cup mild red chili salsa
Preheat over to 350%
Spray oven proff dish with cooking spray.
Remove chicken from the bones and shred. (I buy a roasted chicken from the grocery store)
Lay 1 or 2 tortillas in bottom of baking dish, overlaying slightly.
Layer tortillas with chicken, cheese and salsas. Repeat layers till dish is full ending with cheese and the 2 salsas.
Bake 25 minutes or till bubbly and hot.
For serving top with some toppings, such as fat free sour cream, sliced green onions, salsa, sliced avocado or cilantro...

Make Your Own Mixes!!!!

I hate it when I am halfway through a recipe only to discover I am out of a key ingredient, like brown sugar. Todays first tip is to check your cupboard to see if you have all the necessary ingredients to make your recipe.....but just in case you don't check*****

MAKE YOUR OWN BROWN SUGAR:


Add a Tablespoon of molasses to one cup of white sugar..Mix together with a fork until thorougly incorporated, and you have instant brown sugar.....

TACO SEASONING MIX:

Make your own taco seasoning mix to control the ingredients for better nutrition.
Prep Time: 10 minutes
Ingredients:
1/4 cup instant minced onion
2 Tbsp. chili powder
2 tsp. paprika
2 tsp. crushed dried red pepper flakes
1-1/2 tsp. dried oregano
1/2 tsp. dried marjoram
1 Tbsp. salt
1/4 tsp. pepper
2 Tbsp. cornstarch
1 Tbsp. instant minced garlic
1 tsp. ground cumin
Preparation:
Combine all ingredients in a small bowl and blend thoroughly with wire whisk. Spoon mixture into a tightly closed container and label as "Taco Seasoning Mix". Store in a cool, dry place. Use within 6 months. Makes 6 packages (about 2 Tbsp. each) of mix. 2 Tbsp. equals 1.25-oz. pkg. purchased taco seasoning mix.
To make Taco Filling:
Brown 1 lb. lean ground beef in large skillet over medium heat; drain grease. Add 1/2 cup water and 2 Tbsp. Taco Seasoning Mix. Reduce heat, cover pan, and simmer 10 minutes, stirring occasionally. Makes enough filling for 8 to 10 tacos.

FAJITA SEASONING MIX:

Make your own Fajita seasoning mix.
Ingredients:
3 Tbsp. cornstarch
2 Tbsp. chili powder
1 Tbsp. salt
1 Tbsp. paprika
1 Tbsp. sugar
2-1/2 tsp. crushed chicken bouillon cube
1-1/2 tsp. onion powder
1/2 tsp. garlic powder
1/2 tsp cayenne pepper
1/4 tsp. crushed red pepper flakes
1/2 tsp. cumin
Preparation:
Combine all of the ingredients in a small bowl. Pour into small glass or plastic container, seal tightly and store in a cool, dry place. Makes the equivalent of 3 packets of commercial or purchased Fajita Seasoning Mix.

CHILI SEASONING MIX:

Ingredients:
1 1/8 cups flour
3/4 cup instant minced onion
1/3 cup chili powder
2 Tbsp. ground cumin
2 Tbsp. salt
1 1/2 Tablespoons instant minced garlic
1 Tbsp. crushed hot red pepper flakes
2 tsp. sugar
Mix all ingredients very well. Seperate into 6 equal portions - packaging in aluminum
foil or another airtight package of some type. Label.

To use: Brown one pound of ground beef - drain off excess fat. Sprinkle contents of
one package of the mix over the beef, stirring well. Add one 15 oz. can tomato sauce,
1/4 cup water, and one 15 oz. can undrained kidney beans. Simmer uncovered, for at least
20 minutes, or until the beans are cooked to your liking. Makes 4 servings

ONION SOUP MIX:



Ingredients:
3 onion bouillon cubes, crushed
1 beef bouillon cube, crushed
2 tsp. cornstarch
1/3 cup instant onion flakes
2 dashes pepper
Put all ingredients in a small sandwich bag. Seal well and store in cool, dry
place.

To use: Empty package into a pot and gradually stir in 4 cups cold water and
1 Tbsp. butter. Bring to boil, reduce heat and cover. Simmer 20 minutes. Ladle
soup into oven proof bowls, sprinkle with croutons or toasted bread. Then add
one slice provalone cheese. Briefly put bowls under a broiler to melt cheese.
Serve. Makes 4 1-cup servings.
ONION DIP:
Mix one package onion soup mix with 2 cups sour cream. Chill before serving

BAKING POWDER:

Ingredients:
2 Tablespoons Cream Of Tartar Powder
1 Tablespoon Baking Soda
1 Tablespoon Cornstarch
Sift ingredients together and store in small container with tight-fitting lid.
One teaspoon of this equals 1 teaspoon of commercial baking powder.

COOL WHIP:



Ingredients:
1 teaspoon gelatin
2 teaspoons cold water
3 tablespoons boiling water
1/2 cup ice water
1/2 cup nonfat dry milk
3 tablespoons sugar
3 tablespoons oil
Chill a small mixing bowl. Soften gelatin with 2 teaspoons cold water,
then add boiling water, stirring until gelatin is completely dissolved.
Cool until tepid. Place ice water and nonfat dry milk in the chilled
bowl. Beat at high speed until mixture forms stiff peaks. Add sugar,
still beating, then oil and gelatin. Place in freezer about 15 minutes
then transfer to refrigerator until ready for use. Stir before using
to retain creamy texture. Makes 2 cups

SOUR CREAM:

Ingredients;
2 cups light cream
2 Tbsp buttermilk
Combine cream with buttermilk in hot, clean glass jar with a lid.
Cover tightly and shake gently to thoroughly mix.
Let stand in a warm place till thickened (24-48 hours). Store, covered in refrigerator. Stir before serving. Use within three weeks.

TATOR TOTS;

Ingredients;
8 med. potatoes, cooked and peeled
4 rounded tbsp. flour
Dash pepper
1 tsp. salt
Canola oil
Finely shred or use ricer while potatoes are hot. Stir in flour, salt, and pepper. Heat 1/4" oil in heavy pan. Form into small balls and drop into oil. Fry till slightly golden.
Drain on paper towels, then freeze. To Use: bake in single layer on baking sheet at 400F till crispy
