Eight Miles Down That Road Again & Delicious Apple Dumplings!!!


Well there was no "Tuesday Take It Off Challenge" this week....Janene took the week off....I did weigh this morning and I lost another 3 pounds last week....I am almost doing the Happy Dance...I have been drinking and drinking all my water plus other beverages and tracking my eating by what, amount and when...I also journal on when I feel hungry and why do I think I feel hungry...I also track my exercise and fluids..
Take note of the way you feel—your hunger signals and emotions—just before and after you eat. Measure & Weigh, don't guess!
Food and Points (what you consume, the portion size and points value)
Hunger Levels (When do you get physically hungry? This information is helpful for future planning)
Filling Foods (Try to eat as many filling foods as possible. These foods are healthier and keep you satisfied longer.) Remember GREEN is the way to go!!
I can say from experience that I do best when I journal my food, specifically. There is something about writing down what I consume and being accountable that keeps me on track.
There is a WW saying:
"If you bite it write it. If you snack it, track it. If you nibble it, scribble it."
Believe you me it makes a big difference....

Delicious Apple Dumplings:

Preheat oven to 350 degrees F.

Ingredients
6 apples (Granny Smith or Johnathan)
1 cup Splenda No Calorie Sweetener, Granulated
1 teaspoon ground cinnamon
1 tablespoon Smart Balance Lite
1 can Diet Mountain Dew

Directions:
Spray a Larger muffin tin with butter flavored cooking spray
Wash apples and core using an apple corer and place in the sprayed muffin tins.
Mix together Splenda Granulated Sweetener and cinnamon. Fill each apple with the mixture and then top each apple with a small dot of Smart Balance Lite and pour on a little diet Mt Dew soda, Cover with aluminum foil and bake in preheated oven 45 to 50 minutes or until slightly soft.

This is a diet friendly apple dumpling, taste good and keeps you on target for losing that weight!

Granny Smith Apple

Here is another one:


Apple Dumplings:
6 servings. Each serving equals one 5 A Day serving.

Ingredients

2 Tbsp firmly packed light brown sugar
1½ tsp cinnamon
1 tsp cornstarch
1 tsp vanilla extract
6 macintosh apples, peeled and cored
6 square egg roll wrappers

Preheat the oven to 375 degrees F. Spray six muffin cups with non-stick cooking spray. In a large bowl, combine the sugar, cinnamon, cornstarch, vanilla, and 1 Tbsp water. Add the apples; toss to coat. Place one apple in the center of each egg roll wrapper. Bring the corners up to the top of the apple, pressing and folding to seal the edges. Stand each dumpling in a muffin cup and lightly spray the tops with non-stick cooking spray. Bake until golden, about 20 minutes. Cool on a rack 15 minutes; serve warm.

Nutritional analysis per serving: Calories 165, Fat 1g, Calories from Fat 5%, Cholesterol 3mg, Carbohydrate 36g, Protein 3g, Fiber 2g, Sodium 164mg.

Seven Miles Down That Road Again!!


I received this in a letter from Weight Watchers and wanted to share it with everyone..Take and use what will work for you....My scales's battery died so I have to get another one and will post my weight loss or gain tomorrow....

The surest way to succeed is making small changes. Think in terms of manageable baby steps, like swapping the half-and-half in your morning coffee for fat-free or low-fat milk. There are lots of little changes you can make—in your food plan and daily routine—that will add up to a lot of weight loss over the long haul.

Take a look at the 25 tips below for eating healthfully, fitting exercise into your busy day and revamping your daily routine. Start by picking five changes that you're sure you can tackle and practice them this week. Then try another five next week... (print this out for easy reference).

Not every idea is right for everyone, so experiment and see what works for you. Lots of little changes can yield big weight-loss results—and a healthier new you!

1. Good things come in small packages.
Here's a trick for staying satisfied without consuming large portions: Chop high-calorie foods like cheese and chocolate into smaller pieces. It will seem like you're getting more than you actually are.
2. Get "water-wise."
Make a habit of reaching for a glass of water instead of a high-fat snack. It will help your overall health as well as your waistline. So drink up! Add some zest to your six to eight glasses a day with a twist of lemon or lime.
3. Herb it up.
Stock up your spice rack, and start growing a small herb garden in your kitchen window. Spices and herbs add fantastic flavor to foods without adding fat or calories.
4. Slim down your soup.
Make a big batch of soup and refrigerate it before you eat it. As it cools, the fat will rise to the top and can be skimmed off the surface.
5. Doggie-bag that dinner.
At restaurants that you know serve large portions, ask the waiter to put half of your main course in a take-home box before bringing it to your table. Putting the food away before you start your meal will help you practice portion control.
6. Listen to your cravings.
If you're craving something sweet, eat something sweet—just opt for a healthier nosh (like fruit) instead of a high-calorie one like ice cream. The same goes for crunchy cravings—for example, try air-popped popcorn instead of high-fat chips. It's just smart substitution!
7. Ease your way into produce.
If you're new to eating lots of fruits and vegetables, start slowly. Just add them to the foods you already enjoy. Pile salad veggies into your sandwiches, or add fruit to your cereal.
8. Look for high-fat hints.
Want an easy way to identify high-calorie meals? Keep an eye out for these words: au gratin, parmigiana, tempura, alfredo, creamy and carbonara, and enjoy them in moderation.
9. Don't multi-task while you eat.
If you're working, reading or watching TV while you eat, you won't be paying attention to what's going into your mouth—and you won't be enjoying every bite. Today, every time you have a meal, sit down. Chew slowly and pay attention to flavors and textures. You'll enjoy your food more and eat less.
10. Taste something new.
Broaden your food repertoire—you may find you like more healthy foods than you knew. Try a new fruit or vegetable (ever had plantain, pak choi, starfruit or papaya?).
11. Leave something on your plate at every meal.
One bite of bagel, half your sandwich, the bun from your burger. See if you still feel satisfied eating just a bit less.
12. Get to know your portion sizes.
It's easy to underestimate how much you're eating. Today, don't just estimate things—make sure. Ask how much is in a serving, read the fine print on labels, measure your food. And learn portion equivalents: One serving of pasta, for instance, should be around the size of a tennis ball.
13. Don't give up dips.
If you love creamy dips and sauces, don't cut them out of your food plan completely. Just use low-fat soft cheese and mayo instead of the full fat stuff.
14. Make a healthy substitution.
Learn to swap healthier foods for their less-healthy counterparts. Today, find a substitution that works for you: Use skim or low-fat milk instead of whole milk; try whole-wheat bread instead of white.
15. Bring lunch to work tomorrow.
Packing lunch will help you control your portion sizes. It also provides a good alternative to restaurants and takeaways, where making healthy choices every day can be challenging (not to mention expensive).
16. Have some dessert.
You don't have to deny yourself all the time. Have a treat that brings you pleasure, but this time enjoy it guilt-free be—sure you're practicing portion control, and compensate for your indulgence by exercising a little more or by skipping your afternoon snack.
17. Ask for what you need.
Tell your mother-in-law you don't want seconds. Ask your other half to stop bringing you chocolates. Speak up for the place with great salads when your co-workers are picking a restaurant for lunch. Whatever you need to do to succeed at weight loss, ask for it—make yourself a priority and assert yourself.
18. Improve your treadmill technique.
When walking on a treadmill, don't grip the rails. It's fine to touch them for balance, but you shouldn't have to hold on. If you do, that might be a signal you should lower the intensity level.
19. Simon says... get fit.
Here's an easy way to fit in exercise with your kids: Buy a set of 1 lb weights and play a round of Simon Says—you do it with the weights, they do it without. They'll love it!
20. Make the most of your walks.
If your walking routine has become too easy, increase your effort by finding hills. Just be sure to tackle them at the beginning of your walk, when you have energy to spare.
21. Shop 'til you drop...pounds!
Add a workout to your shopping sessions by walking around the mall before your start spending. And try walking up the escalator—getting to your destination faster will be an added bonus.
22. Walk an extra 100 steps at work.
Adding even a little extra exercise to your daily routine can boost your weight loss. Today, take the stairs instead of the elevator, or stroll down the hall to talk to a co-worker instead of sending an email or calling.
23. Brush your teeth after every meal and snack.
This will be a signal to your mouth—and your mind—that it's time to stop eating. Brushing will also give your mouth a nice fresh taste that you'll be disinclined to ruin with a random chip. At work, keep a toothbrush with a cover and toothpaste in your desk drawer.
24. Clean your closet.
First, it's great exercise. Second, it's an important step in changing your attitude. Get rid of all the clothes that make you look or feel bad. Throw out anything that's too big—don't give yourself the option of ever fitting into those clothes again. Move the smaller clothes up to the front to help motivate you. Soon, you'll be fitting into those too-tight jeans you couldn't bear to part with.
25. Take your measurements.
You might not like your stats now, but you'll be glad you wrote them down when you see how many inches you've lost. It's also another way to measure your success, instead of just looking at the scale. Sometimes even when the numbers on the scale aren't going down, the measurements on your body are.

Chicken-Fried Steak The Skinny Way!!!!


Chicken-Fried Steak:
Serves 4.....WW Points 6

It looks like fried chicken but it's actually steak coated with seasoned flour and bread crumbs. It's pan-fried until crisp, then drizzled with a rich onion gravy.

Ingredients
12 oz lean beef round
1/4 cup(s) white all-purpose flour
3/4 tsp table salt, divided
1/4 tsp black pepper, divided
1 1/4 cup(s) fat-free skim milk, divided
1 large egg white(s)
1 cup(s) dried bread crumbs, coarse-variety
2 slice(s) uncooked reduced-fat bacon
1 spray(s) cooking spray
1/2 cup(s) onion(s), chopped
1/8 tsp hot pepper sauce, optional

Instructions:
Place steak between 2 sheets of waxed paper and pound to 1/2-inch thickness; slice steak into 4 equal pieces.
Combine flour, 1/2 teaspoon of salt and 1/8 teaspoon of pepper on a plate. Combine 1/4 cup of milk and egg white in a shallow bowl. Place bread crumbs on another plate.
Dip a piece of steak in flour mixture; turn to coat both sides. Next, dip steak in milk mixture; turn to coat both sides. Lastly, dip steak in bread crumbs; turn to coat both sides and set aside. Repeat with remaining pieces of steak; reserve 1 tablespoon of leftover flour.
In a large nonstick skillet, over medium heat, brown bacon, flipping once, about 5 minutes; remove from skillet and set aside. Add steaks to same skillet and place over medium-high heat. Cook about 3 to 4 minutes per side for medium, or longer to desired degree of doneness. Remove steaks and set aside.
Off heat, coat skillet with cooking spray and set over medium heat. When hot, add onion; cook until tender, stirring occasionally, about 4 minutes. Add reserved tablespoon of flour; cook, stirring constantly, for 1 minute. Pour in remaining cup of milk, scraping up any browned bits with a wooden spoon. Reduce heat to medium-low; add remaining 1/4 teaspoon of salt, 1/8 teaspoon of pepper and hot sauce. Crumble bacon; stir into skillet. Increase heat to medium and cook until gravy is thickened, stirring constantly, about 1 to 3 minutes. Spoon gravy over steaks and serve immediately. Yields about 3 ounces of steak and 1/4 cup of gravy per serving.

What is a habit? It can be anything you do automatically, mindlessly, without thinking - a sequence of events. Sometimes these habits benefit us, sometimes they do not. Now ask yourself....."If I am not hungry, I eat because I'm ___________"!
The habits which do not benefit us, and are holding us back from our goals, could be uncomfortable, but not impossible, to change.


Potato and Canadian Bacon Slow Cooker Chowder:
Serves 6......WW Points 3

This rich, chunky chowder is extremely satisfying. Lean Canadian bacon gives it great flavor without much fat

Ingredients
2 cup(s) potato(es), cut into 1/2-inch cubes
1 large carrot(s), diced
1 cup(s) leek(s), chopped, white part only
1 medium garlic clove(s), minced
4 cup(s) fat-free chicken broth
1/2 cup(s) uncooked barley
1 piece(s) bay leaf
1/4 tsp dried thyme, crushed
1/4 tsp black pepper
4 oz Canadian-style bacon, cut into 1/4-inch pieces
1/2 cup(s) fat-free evaporated milk
2 oz fat-free half-and-half

Instructions
In a slow cooker, combine potatoes, carrots, leek, garlic, broth, barley, bay leaf, thyme, pepper and bacon; cover and cook on low for 6 hours.
Stir in evaporated milk and half-and-half; heat through, uncovered, about 10 minutes. Yields about 1 2/3 cups per serving

Six Miles Down That Road Again!!


My sixth mile wasn't so great....Didn't lose anything, (except maybe my mind) but then I didn't gain anything......Guess those two truffles and the nite out at "Dixie's" on the Grand caught up with me.....Well no looking back, just full sprint ahead....Better next week....For every pound I lose I am putting a $ in my butter crock and "God help me" if I gain anything, then a $ goes in for every ounce I put back on.....I have really been working hard at this, but like us all, I messed up....I need to remind myself that; This is it! I have one life. How do I choose to spend it? Eating whatever and whenever I want but suffering by being fat, miserable and unhappy all the time? So despite the fact that I occasionally revert to old habits that I'm working to rid myself of, or make some not so wise choices from time to time, I will never give up. Yes, there will be some bumps in traveling Down That Road Again. But I accept that. There is just no way I am going back to the old me....That's just out of the question.....I also accept the fact that this is forever....a lifestyle change......not a short term thing... It is also how I think about myself, and how important this is to me to be a healthy person again....

Pork Lo Mein:WW POINTS....7
A revamped restaurant favorite. Full of flavor and fresh ingredients; not calories and fat.
Ingredients:

8 oz lean pork tenderloin, cut in 1/4-inch-wide strips
3 tbsp low-sodium soy sauce, divided
1 tbsp minced garlic
2 tbsp ginger root, fresh, minced
8 oz uncooked linguini
1/8 tsp table salt, or to taste (for cooking pasta)
1/2 cup(s) carrot(s), thinly sliced
1 tsp canola oil
4 oz button mushrooms, or shiitake mushroom caps, sliced
1/2 cup(s) reduced-sodium chicken broth
1 tsp toasted sesame oil
1/3 cup(s) scallion(s), sliced

Instructions

In a medium bowl, toss pork with 2 tablespoons of soy sauce, garlic and ginger; let stand 20 minutes.
Meanwhile, cook linguini in a large pot of lightly salted water according to package direction; add carrots to pot 5 minutes before linguini will be done. Drain; set aside.
Heat canola oil in a large nonstick skillet over medium-high heat; add mushrooms and pork. Increase heat to high; stir-fry until mushrooms release their liquid and become lightly browned, and pork is cooked through, about 6 minutes.
Add drained linguini and carrots, broth, remaining tablespoon of soy sauce and sesame oil to skillet; toss over low heat until combined. Remove from heat and stir in scallions; serve immediately. Yields about 1 1/4 cups per serving.

Five Miles Down That Road Again!!!


Weigh In Tuesday! (That isn't me on the scales)...My was I surprised to find I had lost 5 more pounds...Just never expected that...Went out with daughters 2 times last week to eat and ate at a Mexican place on Sunday night...Now that place doesn't know the meaning of low fat or healthy food....I started this trip "Down The Road Again" on January 4th and so far I have lost over 21 pounds.....Now is when it will slow down for me....I know this from the past weight loss....I have type 2 diabetes so I really watch my carbs and that helps so much....I will only have 1/2 of a potato one time a week and have found out I can do just fine without them....Use to think you had to have potatoes at every dinner...They filled you up, but guess what, they go away real quick...much better to have a veggie that is high in fiber that will take your body to do some work, to digest it....

"Eat for the body you want, not for the body you have".

Bran Buds Muffin:

Here's a pretty good muffin recipe that is loaded with fiber and actually suppresses the appetite.
3 cups of bran buds
3 cups of water
3 tablespoons of baking powder
let sit until the buds get mushy (about 20 minutes_
add any muffin recipe package (I like Quaker Low Fat Bran)... you can also add low fat brownie mix...
You will have to add more water... about a cup... add enough water until the mixture is moist
put cupcake liners into your muffin tins... spray with cooking spray (make sure you spray or they will stick)... and bake as directed
These muffins are 1 point on weight watchers... I make them because they are a great snack that is low in fat and high in fiber. You can also add any type of nuts, dried fruit (cranberries work well)...Just remember to add on the points for the extras... get creative and make them tasty for you... the bran buds are the important ingredient.

Avocado Citrus Salad:

I found this recipe in an issue of Weight Watchers magazine. I love it
Ingredients:
1/3 cup fresh grapefruit juice
2 Tbsp chopped fresh chives
1 tsp olive oil
3/4 tsp sugar
1/4 tsp salt
1/4 tsp black pepper
2 peeled and sectioned grapefruit
1 Hass avocado, pitted, peeled and diced
2 hearts romaine lettuce, separated into leaves
To make the dressing, whisk together the grapefruit juice, chives, oil, sugar, salt and pepper in a medium bowl:
Add the grapefruit sections and avocado-
Toss gently to coat-
Arrange the lettuce leaves on a large platter (I just show one serving worth here). Spoon the avocado mixture onto the lettuce. Drizzle with any remaining dressing.

Per Serving (1 cup): 106 calories, 5 g fat, 1 g sat fat, 0 g trans fat, 0 mg chol, 109 mg sodium, 16 g carbs, 5 g fiber, 3 g protein, 58 mg calcium.
Serves: 6
Points per serving: 2

Grapefruit is the best lung cancer fighter and a grapefruit a day in addition to your regular meals can speed weight loss....The fruit's acidity slows digestion, helping you feel full longer...it also lowers cholesterol and decrease risk of stroke,and heart disease..


WARM GRAPEFRUIT DESSERT:

1 large grapefruit
1 teaspoon Splenda
1 teaspoon cinnamon or to taste

Preheat oven to 400%F.
Cut the grapefruit in half through the middle...with a serrated citrus knife, loosen the segments, being careful not to cut through the peel. Place the halves, side by side, with the sections facing up, on a baking sheet. Sprinkle with cinnamon. Bake for 20 minutes, or until warmed through and starting to brown on top....Let stand for 5 minutes to cool slightly before serving.....1 WW Point...

Lets talk about setting up your environment so it reinforces the new and healthy habits you are trying to incorporate into your life. For instance- consider everything on your counter tops in your kitchen. Are the things within reach helping you, or hindering your progress? Are your measuring spoons, scale and grilling pans within easy reach? Or do you have to reach around a cookie jar and deep fryer to get to them? Same with your pantry - the prime eye level and front shelf space should contain your healthy items, and the indulgent snacks should be hidden and out of reach/out of sight. It's common sense or you might think it's even silly nonsense; but something as simple as rearranging your things is completely within your control will help your efforts tremendously.I have even posted a picture of me on my fridge door and since I believe in asking God to help me I have 3 prayers posted on my cupboard doors and everyday I say one of them...I also pray while I am exercising....

Four Miles Down That Road Again!!

Now that I am in the Tuesday weight challenge, (over on Janene's Blog "Primitive Lifestyle"), I will be posting my weight loss on Tuesdays, instead of Mondays...I will also post some awesome, good for you recipes...so join me on my journey "Down That Road Again."

I don't know how I did it but I lost another 5.5 pounds....Happy about that, but know it has all been a lot of fluid loss...Don't expect such a good outcome next week...This Saturday I am going with my son and 2 granddaughters shopping at the Mall Of America and know that it will be hard to pass up all the goodies there...Please tell me how you would pass everything up....

A friend of mine bought the "Biggest Loser Cookbook" and this is what she said about it: "I got that "Biggest Loser Cookbook" and I have to tell ya--it has totally changed my eating habits---it is budget friendly too and I have lost 7lbs in 3 weeks---it is good whole foods that you have at home and it is one of the best cookbooks EVER if you or anyone are on a road to eating better---HIGHLY recommended!"
So I bought one on Amazon and it should be here soon...Will try some of the recipes and then let you know how they were.....

I am traveling this "Road Again" just for me. I have only to answer to myself, and I am my harshest critic!
I have learn to celebrate myself for every change that I have made. I've realized that small accomplishments mean as much as large ones and should never be ignored. On some days just getting through it with out cheating myself is an accomplishment in and of itself. I allow myself to realize that.
As the weight comes off I am discovering that my self confidence is growing. I have never realized how the weight was affecting not only my body, but my mind. I have spent a lifetime doubting myself, speaking badly to myself and about myself and never allowed myself to realize my full potential.
I can say I will never again be "on a diet." This is going to be a lifelong change and it feels amazing!

General Tao's Chicken:
Serves 4.......4 WW Points
Ingredients
3/4 cup(s) canned chicken broth, reduced-sodium
1 1/2 tbsp cornstarch
2 tbsp sugar
2 tbsp low-sodium soy sauce
1 tbsp white wine vinegar
1/2 tsp ground ginger
2 tsp peanut oil
2 medium scallion(s), chopped
2 medium garlic clove(s), minced
1/2 tsp red pepper flakes, or 1 dried chili pepper, minced
1 pound(s) uncooked boneless, skinless chicken breast, cut into 2-inch pieces
2 cup(s) cooked white rice, kept hot
Instructions
In a medium bowl, whisk together broth, cornstarch, sugar, soy sauce, vinegar and ginger; set aside.
Heat oil in a wok or large skillet over medium-high heat. Add scallions, garlic and pepper and cook 2 minutes. Add chicken and cook until browned all over, about 5 minutes.
Add reserved sauce and simmer until sauce thickens and chicken is cooked through, about 3 minutes.
Serve chicken and sauce over rice.
Yields about 1 cup of chicken and sauce and 1/2 cup of rice per serving.

Cheesy Chili-Mac
Serves 8......5 WW Points
A hearty meal in a bowl. It's full of great stuff like lean beef, pinto beans and chili peppers. Turn leftovers in burritos.

Ingredients
1 spray(s) cooking spray
2/3 pound(s) raw extra lean ground beef
2 medium onion(s), chopped
29 oz canned stewed tomatoes, Mexican-style (undrained)
2 1/2 cup(s) canned tomato juice
4 oz canned green chili peppers, diced, drained
2 tsp chili powder
1 1/2 cup(s) uncooked macaroni, elbow
31 oz canned pinto beans, drained and rinsed
1/2 cup(s) low-fat shredded cheddar cheese
Instructions
Coat a large skillet with cooking spray. Cook ground beef and onion over medium-high heat until meat is browned, about 10 minutes; drain off fat.
Stir in undrained stewed tomatoes including juice, tomato juice, chili peppers and chili powder; bring mixture to a boil.
Stir in macaroni and beans; return to boiling. Reduce heat, cover and simmer until macaroni is tender, about 15 minutes. Spoon chili into bowls and sprinkle with cheese.
Yields about 1 cup of chili and 1 tablespoon of cheese per serving.

Three Miles Down That Road Again!!

Well I have traveled 3 miles down that olde weight loss road again. Along the way I found out I had to go on a different med for my diabetics...The old one was just to strong for me, making me dizzy and really low blood sugar...and I did something stupid.....You know the really STUPID kind of thing...left my cell phone in my jeans and washed it....OH MY! OH MY! how could I of done that...Do have something to be happy about..LOST a nice ugly 5.9 pounds....Happy with that you betch you!!!!
Here is a desert I made for myself this week....I call it
Heaven Sent Key Lime Pie:
Serves 7 and is 2 WW Points



You will need a 4 serving size, sugar free, Lime Jello
2 containers of Weight Watchers Lime Pie Yogurt
1 tub (80z) of Cool Whip light or fat free
In a microwave safe measuring heat water on high for 45 seconds to 1-1/2 minutes, or until boiling. Whisk Jello until dissolved.
In a large bowl whisk together Jello mixture and the yogurt...
Fold in the Cool Whip..
You can just leave in that bowl or do like I do put 1/2 cup into sherbet dishes and cover with plastic wrap...Seems much nicer that way and then I am not tempted to eat too much...
Refrigerate at least 4 hours or until set..

Here was my supper for tonight: I had Mexican Food!
Jicama Slaw:
1 WW points
1 medium jicama
2 cups angel hair cole slaw
1-11oz can mandarin orange segments, drained, reserve 1/4 cup
1/4 cup light Mayonnaise
1/4 teaspoon fajita seasoning
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 bunch fresh cilantro leaves chopped.
Grate the jicama into a large bowl, add the cole slaw and mandarin oranges: Set aside
In a small bowl, whisk together reserved mandarin juice, mayonnaise, fajita seasoning and salt and pepper.
Pour dressing over jicama mixture. Toss to mix thoroughly. Top with cilantro.
Serve immediately...

CHICKEN CHALUPAS:
Serves 6 WW Points 5
1 roasted chicken (2 lbs)
12 fat free flour tortillas
2 cups low fat shredded sharp cheddar cheese
1 cup mild green chili salsa
1 cup mild red chili salsa
Preheat over to 350%
Spray oven proff dish with cooking spray.
Remove chicken from the bones and shred. (I buy a roasted chicken from the grocery store)
Lay 1 or 2 tortillas in bottom of baking dish, overlaying slightly.
Layer tortillas with chicken, cheese and salsas. Repeat layers till dish is full ending with cheese and the 2 salsas.
Bake 25 minutes or till bubbly and hot.
For serving top with some toppings, such as fat free sour cream, sliced green onions, salsa, sliced avocado or cilantro...

On That Road Trip Once Again!

It seems I am always starting down this road and never completely get there...I almost reached my destination once in 2004, but I evidently convinced myself I didn't deserve to reach it....so all my hard earned losses were put back on and of course I had to add a few more pounds to punish myself for even thinking I deserved to loss that weight....Well I DO deserve to lose this weight!!! I asked myself why I was overweight, but I didn't want just the usual answers, such as I cook the southern style (you know pork fat and more pork fat)etc....so I looked at my life and what was good and what wasn't and I am trying to do some changes there...I also want to set aside time each day just for me to exercise and meditate....Well this road trip started January 5th 2009....I have set small goals for myself and girls I can use all the HELP you can give me....I almost reached my destination going to WW but that isn't an option now, but I do know how to do everything, like measure, measure and measure some more....keep a log of everything that goes into your mouth (those little tastes here and there add up) and drinking water and more water and then of course exercising....Now here in Minnesota it isn't always possible to go out and walk, so I simply walk around the house 10 minutes after each meal and do the old peoples push ups....I lost 2.1 pounds this past week and I am happy with that, but thought I would lose more the first week (water loss) know I have ran to the potty enough to have lost 20 pounds....I just wish I had someone that could come here every Monday and see me weigh...That is what I really need!!! Well since I have done the WW thingy I have compiled a lot of recipes with the points figured out, but I didn't always keep the calories, fat and fiber information. I will try and post some recipes each Monday that I have made and like.....

SIMPLE SALISBURY STEAK: 5 WW Points
I gave it 4****!
1 egg
1/3 cup dry bread crumbs
1 can (10-3/4 ounces) reduced fat-sodium condensed cream of mushroom soup undiluted, divided
1/4 cup finely chopped onion
1 pound 93% lean ground beef
1/2 cup skim milk
1/4 teaspoon Browning sauce (optional) I used it.
1/4 teaspoon salt
1-1/2 cup sliced fresh mushrooms
In a bowl combine the egg, bread crumbs, 1/4 cup soup and onion. crumble the beef over the mixture and mix well. Shape into 6 patties. In a large nonstick skillet, brown the patties on both sides, drain.
In a bowl, combine the milk, Browning sauce, if desired, salt and remaining soup; stir in mushrooms. Pour over patties, reduce heat; cover and simmer for 15-20 minutes or until meat is no longer pink....Yield 6 servings

SCALLOPED POTATOES: 2 WW Points
Serves 6 ( 1/2 Cup)

Preheat Oven to 350%
5 coups frozen Southern Style Hash browns thawed
2 tablespoons flour
1 tablespoon dried onion
1 teaspoon light butter
1/4 teaspoon pepper
1/2 cup skim milk
1/2 cup Crispy Fried Onions
Spray a 2-1/2 quart casserole dish with nonstick cooking spray.
Mix the potatoes, flour, dried onions, butter and pepper together and put into prepared casserole. Pour milk over top. Cover and bake 45 minutes. Uncover and sprinkle on the crispy fried onions and continue to bake uncovered for 30 minutes.
Yield 6 1/2 cup servings:

EIGHT LAYER SALAD: 2 WW Points
Serves 12 (1-1/2 Cups)

6 cups torn iceberg lettuce
8 cups torn romaine lettuce
6 40% less fat bacon slices cooked and crumbled ( I used Oscar Meyers recipe ready bacon pieces)
3/4 cups chopped red onion
1-10 ounce package frozen green peas, thawed
1 cup chopped red bell pepper
1 8 ounce can sliced water chestnuts drained
3/4 cup (3 ounces) shredded reduced fat sharp cheddar cheese
3/4 cup reduced fat mayonnaise
3/4 cup sour cream
1 (0.7 ounce) package dry Italian dressing mix.
Combine lettuces in a 4 quart bowl. Toss well. Layer crumbled bacon and next 5 ingredients on top of lettuce. Combine mayonnaise, sour cream and dressing mix in a small bowl, stir well. Spread dressing over top of salad, sealing to edge of bowl. Cover and chill up to 24 hours.
Yield: 12 1-1/2 cup servings.
