PIZZA! PIZZA! CHICAGO STYLE~NEW YORK STYLE~MEXICAN~BUFALLO CHICKEN~CARBONARA PIZZA!!



CHICAGO STYLE PAN PIZZA

"This is the best Chicago-style pizza that I have ever had. Make sure that you use the Parmesan in hard triangle form. It tastes so much better when you grate it yourself." Greasing the pan tends to make the dough slip, so I grease the pan and lightly dust with cornmeal. Baking the crust for 15 min before placing everything on top was key. Make very sure you drain the tomatoes well, or else your pizza will be a little soggy. If you let your mozzarella cheese sit an dry for awhile it will melt much better.

INGREDIENTS:

1 (1 pound) loaf frozen bread dough, thawed
1 pound bulk Italian sausage
2 cups shredded mozzarella cheese
8 ounces sliced fresh mushrooms
1 small onion, chopped
2 teaspoons olive oil
1 (28 ounce) can diced tomatoes, drained
3/4 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon fennel seed
1/4 teaspoon garlic powder
1/2 cup freshly grated Parmesan cheese

DIRECTIONS:

Preheat the oven to 350 degrees F (175 degrees C). Press the dough into the bottom and up the sides of a greased 9x13 inch baking dish.
Crumble the sausage into a large skillet over medium-high heat. Cook and stir until evenly browned. Remove the sausage with a slotted spoon, and sprinkle over the dough crust. Sprinkle mozzarella cheese evenly over the sausage.
Add mushrooms and onion to the skillet; cook and stir until the onion is tender. Stir in the tomatoes, oregano, salt, fennel seed and garlic powder. Spoon over the mozzarella cheese. Sprinkle Parmesan cheese over the top.
Bake for 25 to 35 minutes in the preheated oven, or until crust is golden brown.

PIZZA CARBONARA

"Convenient refrigerated pizza crust is dressed up with a creamy Parmesan sauce and a topping of Monterey Jack cheese, bacon and green onions in this tasty recipe. It's a deliciously different addition to any pizza party

INGREDIENTS:

1 (10 ounce) can refrigerated pizza crust
1/3 cup finely chopped onion
2 garlic cloves, minced
1 tablespoon butter or margarine
1 tablespoon all-purpose flour
1/8 teaspoon white pepper
1 cup milk
1/4 teaspoon chicken bouillon granules
1/4 cup grated Parmesan cheese
1/2 pound sliced bacon, cooked and crumbled
1 1/2 cups shredded Monterey Jack cheese
3 green onions, thinly sliced

DIRECTIONS:

Unroll pizza crust. Press onto a greased 12-in. pizza pan; build up edges slightly. Prick dough thoroughly with a fork. Bake at 425 degrees F for 7-10 minutes or until lightly browned. Meanwhile, in a saucepan, saute onion and garlic in butter until tender. Stir in flour and pepper until blended. Gradually add milk and bouillon.
Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat; stir in Parmesan cheese. Spread over hot crust. Sprinkle with bacon, Monterey Jack cheese and green onions. Bake at 425 degrees F for 8-12 minutes or until cheese is melted. Let stand for 5 minutes before cutting.

NEW YORK STYLE PIZZA

New York style pizza is a style originally developed in New York City, where pizza is often sold in oversized, thin and flexible slices. It has a very thick outer crust and a thin middle and often has a rectangular shape. The pizza slices are usually eaten folded in half, because its size and flexibility can make it difficult to eat otherwise.

INGREDIENTS:

1 recipe basic pizza dough , recipe follows
Cornmeal, for dusting
4 tablespoons extra-virgin olive oil
2 cups your favorite tomato sauce
1/2 cup fresh basil leaves
1 cup freshly grated Parmigiano-Reggiano
1-pound mozzarella, sliced 1/4-inch thick

DIRECTIONS:

Preheat oven to 500 degrees F. If you have one, place a pizza stone on the bottom rack of the oven.
Divide the dough in half and roll into a 12-inch circle, about 1/2-inch thick.
Dust pizza peel or baking sheet with cornmeal. Place rolled out dough on peel. Brush pizza dough with 2 tablespoons olive oil. Spread 1 cup tomato sauce evenly over dough, leaving a 1/2-inch border along the edges. Sprinkle 1/4 cup basil leaves on top of sauce and then top with 1/2 cup Parmigiano-Reggiano. Finally, top with 1/2-pound mozzarella slices. Bake for about 8 to 10 minutes, or until cheese is bubbling and the edges are golden brown. Repeat with remaining ingredients to make 2 pizzas.

BASIC PIZZA DOUGH

INGREDIENTS:

1 package active dry yeast
2 teaspoons sugar
1 cup warm water (110 degrees F)
1/4 cup lard or vegetable shortening
3 to 4 cups all-purpose flour
2 teaspoons salt
Olive oil

DIRECTIONS:

In an electric mixing bowl, whisk the yeast, sugar, water and lard together to make a paste. Add the flour and salt and mix, using a dough hook, until the dough comes away from the sides and crawls up the dough hook. Remove the dough from the bowl. Grease the bowl with olive oil and place the dough back in the bowl. Cover the bowl with plastic wrap and let the dough rise until doubled in size, about 1 hour. Turn the dough out onto a floured surface and divide dough in half. Roll the dough into balls, cover, and let the dough rest for 15 to 20 minutes. The dough is ready to be shaped.
Yield: dough for 2 (12-inch) pizzas

BUFFALO CHICKEN PIZZA

Pizza with a little kick of buffalo wing flavor! Have your pizza and wings together!"

INGREDIENTS:

3 skinless, boneless chicken breast halves - cooked and shredded
2 tablespoons butter, melted
2-3 Tablespoons Frank's Red Hot Buffalo Chicken Sauce
½ to 1 cup blue cheese salad dressing (use a good brand or make your own)
1 (16 inch) prepared pizza crust
1 (8 ounce) package shredded mozzarella cheese
DIRECTIONS:
Preheat oven to 425 degrees F (220 degrees C).
In a medium bowl combine the cubed chicken, melted butter and hot sauce. Mix well. Spread whole bottle of salad dressing over crust, then top with chicken mixture and sprinkle with shredded cheese.
Bake in preheated oven until crust is golden brown and cheese is bubbly, about 5 to 10 minutes. Let set a few minutes before slicing, and serve.

MEXICAN PIZZA

Specially seasoned ground beef, refried beans, salsa and cheese layered in a deep dish style. A tasty and easy Mexican-style pizza with a flour tortilla crust!

INGREDIENTS:
1/2 pound ground beef
1 medium onion, diced
1 clove garlic, minced
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon paprika
1/2 teaspoon black pepper
1/2 teaspoon salt
1 (16 ounce) can refried beans
4 (10 inch) flour tortillas
1/2 cup salsa
1 cup shredded Cheddar cheese
1 cup shredded Monterey Jack cheese
2 green onions, chopped
2 roma (plum) tomatoes, diced
1/4 cup finely chopped jalapeno peppers
1/4 cup sour cream (optional)
DIRECTIONS:
Preheat the oven to 350 degrees F (175 degrees C). Coat 2 pie plates with non-stick cooking spray.
Place beef, onion and garlic in a skillet over medium heat. Cook until beef is evenly browned. Drain off grease. Season the meat with chili powder, cumin, paprika, salt and pepper.
Lay one tortilla in each pie plate, and cover with a layer of refried beans. Spread half of the seasoned ground beef over each one, and then cover with a second tortilla. Bake for 10 minutes in the preheated oven.
Remove the plates from the oven, and let cool slightly. Spread half of the salsa over each top tortilla. Cover each pizza with half of the Cheddar and Monterey Jack cheeses. Place half of the tomatoes, half of the green onions, and half of the jalapeno slices onto each one.
Return the pizzas to the oven, and bake for 5 to 10 more minutes, until the cheese is melted. Remove from the oven, and let cool slightly before slicing each one into 4pieces.

CHALUPAS & BANANA BARS RECIPES!!!


CHALUPAS

I made this for supper last night...My granddaughter's husband loves it!

INGREDIENTS:
2-lbs pork roast
1-lb pinto beans
2-cloves garlic, minced
2-tablespoons chili powder
1-tablespoon cumin
1-tablespoon mexican oregano
1-tablespoon picante sauce
1-teaspoon salt
1-1/2-lbs cheddar cheese grated
1-head lettuce shredded
12-bunches green onions & chives, chopped
5-tomatoes, chopped
corn chips
guacamole
extra picante sauce

DIRECTIONS:
In a large pan or crock pot, place the pork roast and cover with water.
Add the next 7 ingredients and cook over low heat for 8 hours, stirring occasionally to blend all ingredients well.
Serve over corn chips.
Top with cheddar cheese, lettuce, onions tomatoes, guacamole, and extra picante sauce as desired.
Let your family;guests build their own Chalupas.

BANANA BARS

Our desert...Everyone loves these!

INGREDIENTS:
1/2-cup butter, softened
2-cups sugar
3-eggs
1-1/2-cups mashed, ripe bananas (about 3 medium)
1-teaspoon vanilla extract
2-cups all-purpose flour
1-teaspoon baking soda
pinch of salt
frosting (recipe below)
chopped nuts for garnish (optional)

DIRECTIONS:
Cream butter & sugar.
Beat in eggs, bananas and vanilla.
Combine flour, salt and baking soda.
Add to creamed mixture, and beat well.
Pour into a greased 15-by-10-by-1-inch baking pan.
Bake at 350 degrees for 25 minutes or until bars test done. Cool. Frost. Add chopped nuts for garnish!

BANANA FROSTING

INGREDIENTS:
2-large ripe bananas
1/2-teaspoon lemon juice
1/4-cup butter
3-1/2-cups powdered sugar

DIRECTIONS:
Mix together bananas & lemon juice.
In a seperate bowl, beat butter until soft and creamy.
Gradually and alternately add powdered sugar and banana mixture to butter, and beat until fluffy.

Doctor, Should I!!!!!


Just Had To Share This With You All
I found this over at Cat Nap Inn Primitives; and since we are all watching what we eat,just had to share it with you'll. I sooo agree!! And I have always said I am in shape because ROUND is a shape! LOL

Q: Doctor, I've heard that cardiovascular exercise can prolong life; is this true?
A: Your heart is only good for so many beats, and that's it... don't waste them on exercise. Everything wears out eventually. Speeding up your heart will not make you live longer; that's like saying you can extend the life of your car by driving it faster. Want to live longer? Take a nap.

Q: Should I cut down on meat and eat more fruits and vegetables?
A: You must grasp logistical efficiencies. What does a cow eat? Hay and corn. And what are these? Vegetables. So a steak is nothing more than an efficient mechanism of delivering vegetables to your system. Need grain? Eat chicken. Beef is also a good source of field grass (green leafy vegetable). And a pork chop can give you 100% of your recommended daily allowance of vegetable products.

Q: Should I reduce my alcohol intake?
A: No, not at all. Wine is made from fruit. Brandy is distilled wine, that means they take the water out of the fruity bit so you get even more of the goodness that way. Beer is also made out of grain. Bottoms up!

Q: How can I calculate my body/fat ratio?
A: Well, if you have a body and you have fat, your ratio is one to one. If you have two bodies, your ratio is two to one, etc.
Q: What are some of the advantages of participating in a regular exercise program?A: Can't think of a single one, sorry. My philosophy is: No Pain...Good!
Q: Aren't fried foods bad for you?
A: YOU'RE NOT LISTENING!!! .... Foods are fried these days in vegetable oil. In fact, they're permeated in it. How could getting more vegetables be bad for you?

Q: Will sit-ups help prevent me from getting a little soft around the middle?
A: Definitely not! When you exercise a muscle, it gets bigger. You should only be doing sit-ups if you want a bigger stomach.

Q: Is chocolate bad for me?
A: Are you crazy? HELLO Cocoa beans! Another vegetable!!! It's the bestfeel good food around!

Q: Is swimming good for your figure?
A: If swimming is good for your figure, explain whales to me.

Q: Is getting in-shape important for my lifestyle?
A: Hey! 'Round' is a shape!Well, I hope this has cleared up any misconceptions you may have hadabout food and diets.

AND.....For those of you who watch what you eat, here's the final word on nutrition and health.It's a relief to know the truth after all those conflicting nutritional studies.
1. The Japanese eat very little fatand suffer fewer heart attacks than Americans.
2. The Mexicans eat a lot of fatand suffer fewer heart attacks than Americans.
3. The Chinese drink very little red wine and suffer fewer heart attacks than Americans.
4. The Italians drink a lot of red wineand suffer fewer heart attacks than Americans.
5. The Germans drink a lot of beers and eat lotsof sausages and fats and suffer fewer heart attacksthan Americans.
CONCLUSION; Eat and drink what you like.Speaking English is apparently what kills you.

Three Miles Down That Road Again!!

Well I have traveled 3 miles down that olde weight loss road again. Along the way I found out I had to go on a different med for my diabetics...The old one was just to strong for me, making me dizzy and really low blood sugar...and I did something stupid.....You know the really STUPID kind of thing...left my cell phone in my jeans and washed it....OH MY! OH MY! how could I of done that...Do have something to be happy about..LOST a nice ugly 5.9 pounds....Happy with that you betch you!!!!
Here is a desert I made for myself this week....I call it
Heaven Sent Key Lime Pie:
Serves 7 and is 2 WW Points



You will need a 4 serving size, sugar free, Lime Jello
2 containers of Weight Watchers Lime Pie Yogurt
1 tub (80z) of Cool Whip light or fat free
In a microwave safe measuring heat water on high for 45 seconds to 1-1/2 minutes, or until boiling. Whisk Jello until dissolved.
In a large bowl whisk together Jello mixture and the yogurt...
Fold in the Cool Whip..
You can just leave in that bowl or do like I do put 1/2 cup into sherbet dishes and cover with plastic wrap...Seems much nicer that way and then I am not tempted to eat too much...
Refrigerate at least 4 hours or until set..

Here was my supper for tonight: I had Mexican Food!
Jicama Slaw:
1 WW points
1 medium jicama
2 cups angel hair cole slaw
1-11oz can mandarin orange segments, drained, reserve 1/4 cup
1/4 cup light Mayonnaise
1/4 teaspoon fajita seasoning
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 bunch fresh cilantro leaves chopped.
Grate the jicama into a large bowl, add the cole slaw and mandarin oranges: Set aside
In a small bowl, whisk together reserved mandarin juice, mayonnaise, fajita seasoning and salt and pepper.
Pour dressing over jicama mixture. Toss to mix thoroughly. Top with cilantro.
Serve immediately...

CHICKEN CHALUPAS:
Serves 6 WW Points 5
1 roasted chicken (2 lbs)
12 fat free flour tortillas
2 cups low fat shredded sharp cheddar cheese
1 cup mild green chili salsa
1 cup mild red chili salsa
Preheat over to 350%
Spray oven proff dish with cooking spray.
Remove chicken from the bones and shred. (I buy a roasted chicken from the grocery store)
Lay 1 or 2 tortillas in bottom of baking dish, overlaying slightly.
Layer tortillas with chicken, cheese and salsas. Repeat layers till dish is full ending with cheese and the 2 salsas.
Bake 25 minutes or till bubbly and hot.
For serving top with some toppings, such as fat free sour cream, sliced green onions, salsa, sliced avocado or cilantro...
